Are Clay Pots Safe for Oven Cooking?
Yes. A clay pot built for food use is safe in the oven, provided you heat it gradually and keep it off direct flame. People have baked, roasted and slow-cooked in clay for centuries because it does something metal can’t: it warms food slowly and holds moisture in, so a shoulder of pork or a tray of potatoes comes out tender instead of dried at the edges.
Clay just asks to be handled on its own terms. It doesn’t like sudden heat. Get the heating right and the rest is easier than cooking in a metal roasting tin.
Start cold, heat slowly
Put your clay pot into a cold oven, then turn the oven on. The pot and the oven come up to temperature together, and that is what keeps the ceramic calm.
The thing you’re avoiding is thermal shock. Ceramic expands as it heats, and if one part gets hot while the rest is still cold, that uneven stress is what opens a crack. A cold pot dropped into a 200°C oven is the classic way to ruin one. A cold pot that warms with the oven has no such problem.
So the routine is short. Food in the pot, pot in the cold oven, oven on, and let both climb together. By the time you reach for it, the pot is as hot as the oven around it, so use gloves. For the longer version, why it happens and how far you can push it, see .
Keep it off direct flame
Most clay roasters are made for the oven and nothing else. A gas ring, an electric hob, an open flame or an induction plate all heat one spot hard and fast, and that concentrated heat is exactly the uneven stress the pot can’t take. Unless a product is sold specifically for stovetop or direct heat, treat it as oven-only.
The oven is where a clay pot belongs anyway. The heat comes at it from every side at once, slow and even, with none of the one-spot stress that cracks it.
What food-safe actually means here
Any pot you cook in has to be safe for food contact. In the EU that sits under Regulation (EC) No 1935/2004, the general rule for materials that touch food. For ceramics there is a more specific one: Council Directive 84/500/EEC, which caps how much lead and cadmium a piece is allowed to release into food.
We had our pots tested against that directive. In July 2025 we sent three finishes to IBA București, the National Institute for Research and Development in Food Bioresources, for a heavy-metal migration test. The lab soaks the pot in a 4% acetic acid solution for 24 hours and measures what comes out by ICP-MS, the method the directive specifies for ceramics.
Here is what came back (reports 3050, 3051 and 3052, all dated 22 July 2025):
- Natural, unglazed finish: lead 0.034 mg/L, cadmium below 0.001 mg/L.
- Semi-glazed: both lead and cadmium below detection, under 0.001 mg/L.
- Fully glazed: lead 0.065 mg/L, cadmium below 0.001 mg/L.
The EU limits are 1.5 mg/L for lead and 0.1 mg/L for cadmium. The highest lead reading, on the fully glazed pot, sits at about 4% of the allowed limit. That is tested and below EU limits, not a certificate stamped on every pot: these were migration tests on representative samples from one production lot. Why clay suits the oven
Clay heats evenly and lets go of that heat slowly, so food cooks through without hot spots scorching one side. That is why it is the traditional pot for a whole roast chicken, a joint of beef, root vegetables, bread, and the long braises that want hours rather than minutes.
Unglazed clay adds one more trick. The raw body absorbs a little water when you soak it before cooking, and in the oven that water leaves as steam, basting the food from the pot itself. It is the reason a clay roaster keeps meat moist with no added fat. If you have just bought one, read before its first bake, because unglazed pieces want a soak and a season first.
Safe use, in short
- Wash the pot before its first use, and soak unglazed pieces if the care card says to.
- Always start in a cold oven and let it heat with the food inside.
- Skip direct flame and the hob unless the pot is sold for it.
- Never pour cold water into a hot pot, or set a hot pot on a cold wet surface.
- Let it cool before you wash it, and dry it fully before it goes away.

Are clay pots oven safe?
Yes, as long as the pot is made for oven use. Put the food in, place the pot in a cold oven, then turn the heat on and let both warm up together.
Can I put a clay pot straight into a preheated oven?
Better not. Clay reacts badly to a sudden jump in temperature. Start it cold with the oven off, and switch on once the pot is inside.
Can a clay pot crack in the oven?
It can, if it meets thermal shock: a cold pot into fierce heat, or cold liquid into a hot pot. Heat it gradually, let it cool gradually, and cracking is unlikely. See for the details.
Are your pots tested for lead and cadmium?
Yes. IBA București tested our natural, semi-glazed and fully glazed finishes for lead and cadmium migration in July 2025, and all three came back below the EU limits set in Directive 84/500/EEC.
Can I cook with a clay pot on a gas burner?
Usually no. Most clay roasters are for the oven only, where the heat surrounds the pot. Direct flame heats one patch too fast. Use a burner only if that specific pot is sold for direct heat.
